UniProtKB description:  Catalyzes the conversion of hercynylcysteine sulfoxide to ergothioneine (EGT) by cleaving the cysteine residue at the sulfur atom, the last step in the biosynthesis pathway of ergothioneine (PubMed:25275953, PubMed:29503207). Ergothioneine is an unusual thio-histidine betaine amino acid that acts as an antioxidant against peroxide in conidia and contributes to conidial longevity (PubMed:22209968, PubMed:25446508).
